This book caters both to the beginner and the gourmet, and one of the delights of the author's books, is that the dishes turn out edible and looking like the finished product as illustrated in the books. Margaret did not try to create recipes, and then tell the reader to buy for example "garam masala" because in those days that item was not easily sourced. Instead, the various elements of the masala are indicated, and instructions are given for their preparation, in a simple, non-mystical manner, so that the cook is suddenly creating Indian food, or French cuisine or Middle Eastern dishes.
